With that said, having that sort of pressure against your adam's apple sucks, and feels like it could be permanently damaging. I'd be surprised that fighters don't tap from it.
I would always do it like that with the gi on, because I sucked at getting chokes from the back with the gi.

Well, some guys can't take a punch... but Metcalf has the shooting style that would translate to MMA (IMO). Some really great wrestlers don't take to submissions either. So even though he might be a bad matchup for Gray, he probably would never get through the gamut of strikers and submission guys to get to that level. I see it the same way as a lot of boxers... I think there were a lot of boxers that would whup guys like Chuck in his prime (assuming he stood with them, which I think he would have in his prime)... but they would never get to earn a crack at Chuck because they would never survive the gamut of wrestlers to get to him. Chuck was the best striker with takedown defense. Gray (right now) is the best wrestler with submission and striking defense.
I honestly think a guy like Metcalf could show up tomorrow and give Gray a run for his money... but he would probably never beat Nate Diaz.

I'm not mad at all. I'm sure he could beat some UFC LWs. He's a champion. It's just like Carlos Condit is beating some UFC fighters. And Ben Henderson could, too.

SPX, it does hurt like a mother, but if you dont panic you realize that it is mostly pain. If you have large muscles in the front of your neck, the adam's apple cant really be crushed past that point, without using the thumbs to press it in further... so it is really just pain/panic. I have used it sevral times in grappling comp and it always gets a tap.

Interesting. I have had it done to me and I didn't want it to go any further than it did because I felt I would be permanently injured if that were the case.

Truth be told, the neck muscle/paini thing is what I have been told by my teachers... personally, I think you could easily crush the windpipe with the wrist deep version like Fedor does. But I can also see how having teh forearm all the way across like JT did would not give you enough leverage to crush it.
But yeah, I don't rally have any desire to test my instructor's theory. Someone does that to me, I am tapping.

I remember hearing something about police departments changing their training to shift away from the "bar-arm choke" with the forearm across the front and towards the RNC style choke with the elbow under the chin, under the belief that the bar-arm choke could damage the windpipe.
