Luke, you make sushi at home right? I am going to attempt some quinoa sushi tonight. I have never made sushi at home, and I know I am not going to be able to roll it well. Give me some pointers.

You can buy the bamboo mats pretty cheaply. But if you can't find one use plastic wrap and a tea towel and just be gentle so you don't tear the nori.

Any tricks to getting the rice (quinoa in this case) sticky and not all mushy and gross? I am planning on using rice wine vinegar and agave nectar.

I have attempted this once before with brown rice and it was an unmitigated disaster.

Make sure you wash it several times until the water is clear, then I just cook it in a rice cooker. After I put on the sugar/vigar mix I put it in the freezer for about 20 minutes before I stay making rolls.

Just make sure all the water is evaportated so it wont be mushy

I use a bamboo roller to for the rolls ,then put plastic wrap over them so they hold together better while cutting them into pieces . The rolls seem to cut better also if you keep your knife wet
